Époisses is a cow's milk cheese revered as the "king of cheeses" by the French culinary author Brillat-Savarin. It has held a Protected Designation of Origin (PDO) since 1996. The PDO region covers approximately the northwestern half of Côte-d'Or, two cantons of Haute-Marne, and three cantons of Yonne, with its name derived from the village of Époisses located in the western part of this area.
The milk used to make our Époisses comes from cows fed without GMOs (<0.9%). It takes 2 liters of milk to produce a 250g Époisses!
